Tomato peeling line made up of:
-Infeed elevator to peeler: Infeeds the already washed and blanched tomatoes to the thermophysical peeler.
-Thermophysical Peeler:
This is a steam peeling method: the pre-heated tomato first undergoes an
extremely rapid increase in temperature, up to approximately 115°C in the
high-pressure chamber of the peeler, and then an equally rapid cooling process
under vacuum conditions to produce a sort of skin explosion, whereby the skin
comes away from the pulp. The
skin is not completely detached from the fruit inside the peeling machine, but
by the skin-removal units, positioned after the peeling unit. In this case the
effective fruit peeling takes place in the skin-removal units.
-Tomato squeezer.
After the peeler, the tomatoes drop
down into the tomato squeezer which is like a conveyor with plastic disks which
lift the skin a bit from the tomato so it will be easier to peel of in the
tomato skin remover.

This machine is
the finishing step in the peeling of the tomato and is specially designed
and built for the removal of the remaining scraps of skin left after peeling
the tomato, due to
diverse factors,
such as: a variety and uneven ripening of the tomato itself.
Functioning:
The peeled tomato,
coming from the peeler, is placed in the machine, which consists of a robust
stainless steel structure on which a rubber-coated roller conveyor is mounted
on special steel chains
We have two
movements: the first is traslation to transport the tomato, the second is the
rotation of
the rubber rollers, which bring to the end special pinions which, meshing
with the racks, produce a counter-rotating movement. This movement
has longitudinal reliefs that prevent the peels from sticking to the rollers
and thus they are expelled.
To ensure the
efficiency of the machine, two brushes are used, the first of which removes the
scraps of skin from the tomatoes, which are then eliminated. The second
brush is for washing the rollers by means of a shower made up of spray
nozzles.
These operations
are carried out in the return section of the conveyor.
All parts in
contact with the product are in stainless steel and sanitary rubber.
The motorization
consists of crown, pinion, chain and an electric motor.
A special stainless
steel hopper allows the tomato to be unloaded to the next machine.
This skin separator
allows you to leave the peeled tomato peeled washed and shiny and with all its
best properties.
